Dandelion Salad

Wash and tear up dandelion greens (escarole might be good as an alternative), boil and cool red potatoes, fry bacon, layer in bowl. Leave a little bacon grease in the pan, add garlic and sautee til golden, deglaze with vinegar& water (wine could be good too) add a bit of sugar, salt, pepper, drizzle on top of salad. I can estimate measurements – 4 c greens, 1lb potato, 1/3 lb bacon, 1/4c vinegar and water (more vinegar than water) 1/4 tsp sugar, salt, pepper, 2 cloves garlic. I imagine this would be very good with hardboiled eggs, maybe beets.
